Stay in Dublin for a day.
Book a flight to the Algarve for a week and get some sun and cheap booze.

well being a cork girl myself I have to agree with the first answer! You could go to Blarney castle and kiss the blarney stone!!
If you are a shopaholic like myself you will be in heaven in cork, I would advise to spend full day shopping!
You could go to fota wildlife park!
Or here is a list of other things to do:
I would also advise a trip to west cork it is beautiful!
Also there is an airport and a ferry port in Cork so getting there shouldn’t be a bother!!

If you start at Dublin, you can visit-
The national museum (kildare st. and collins barracks sites)
The national gallery (on Merrion sq)
The chester beatty library museum (Dublin castle)
Phoenix park (contains the zoo, wellington memorial, ashtown castle)
In terms of castles-
In Dublin there’s-
Drimnagh castle it’s the only castle in Ireland still with a wet moat, however it’s not much to look at (and away from the city centre).
Dublin Castle was the effective english headquarters during the period of occupation. Much of the original castle is now hidden in the fabric of the current buildings, however there are portions of it still visible.
Dalkey castle is a tower house and apparently has re-enactors on location at the weekends.
Swords Castle, built as a summer residence for the bishop of dublin, the castle is currently undergoing renovation work, but is still open to the public.
Beyond Dublin-
Trim castle, in trim, co.Meath has an impressive castle.
Limerick has king Johns castle (in the city centre), was besieged and attacked by miners attempting to undermine the walls.
Blarney castle, co cork.
Go to newgrange in Northern Meath, it’s on the river boyne near Drogheda. It’s a megalithic burial chambered cain, but the entire area is scattered with historic sites. (Knowth and Dowth burial chambers, mellifont abbey, the boyne battle site, numerous bronze age barrows, etc)
Kilkenny, has a castle in the city centre, that was partially destroyed following a rebellion (to prevent it being used as a fortification again), but continued to be lived in until recently.
