There are no fun sights to see on the drive from Dublin to Galway, because it is a concrete motorway all the way, with a 120 km speed limit.
If you want a scenic tourist route, with quaint little villages with ducks in the pond, you will have to plan a route which avoids motorways, and that will not be easy. Most of those places were bulldozed out of existence, to make way for the Motorway. It was called progress. LOL.

I just spend ten days there with family, and did a lot of driving. As the guy above me said, the motorway route straight to Galway would be kind of a bore. We were staying in specific places along the way. We started in Dublin and drive south along the east coast. Stopped at Powerscourt. Drove down to Waterford. the Waterford Crystal company just opened a new center with a tour, lots of fun. Continued to the west along the southern secondary highways (labeled with an N). Hit the Jameson Whiskey tour in Midleton. The Cork/Cobh and Blarney area is great. Stay on the N20 leavoing Blarney and go back to the north toward Limerick. Adare is near Limerick, and is lovely. Pick up the N18 outside of Limerick and that will take you back to the north right into Galway.

If you have time, go west from Blarney, do the Ring of Kerry around Killarney National Park, stay along the Atlantic coast and see Doolin, the Cliffs of Moher and maybe even Dingle. They are all on the way to Galway. Three weeks is more than enough time to do all that.
