My parents are visiting on Thursday and will get into town at 7.15pm on the train, after flying over from the UK to Dublin, then train from Dublin to Galway. It will have been a long enough day for them and they will have had sandwiches, but will still be hungry… although not for a large meal.

What can I do as a light evening snack/meal, that won’t be too heavy or spicy, is easy to do (I have to go and pick them up in the car and bring them back to house) and is also tasty??

    Pasta salad – cold pasta mixed with a tin of tuna, tin of sweetcorn and mayonaisse.

    Picky bits like salad, mini sausage rolls, cocktail sausages, scotch egg, pork pie, chicken dippers, egg mayo and some crusty rolls.

    maccaroni cheese! very simple to make and is always tasty without fail. you can also and a little red onion to it for extra flavour and brown sone bread crumbs over the top of it in the oven mmmmmm think i’m going to make some now thanks

    if you have the afternoon to prepare why not make a chicken stew, you can then let it simmer while you pick them up.

    or the easy options, scrambled eggs, beans on toast, jacket potatoes, salad, soup and crusty bread.

    CHICKEN SALAD

    1 7 oz. Creamette elbow macaroni 1 1/2 to 2 lbs chicken breast
    1 small. onion, diced (red)
    1 green bell pepper
    1 red bell pepper
    1 celery stalk, chopped
    Salt and Pepper to taste
    2 boiled eggs, chopped placed on top at the end
    Hellmann’s mayonnaise
    Frozen peas

    Cut up vegetables Cook the noodles and add the frozen peas at the last 3 minutes of the boiling noodles. Drain and rinse with cold water.
    Add vegetable, mayonnaise, noodles and peas then the chicken. Using the canned chicken add the water from the can. Add at the end with the rest so it does not break up to much. You will have to add more mayonnaise as it soaks up about 1 to 2 hours later.

    If using cooked chicken, add onion, celery together until done. Cool cooked chicken dice. Add salt and salad dressing or mayonnaise. Add chopped eggs. Garnish with paprika.

    Optional – a pinch of Paprika on eggs, but not to much otherwise it will change the taste to much.

    Optional – cherry tomatoes.

    Note: you can substitute 1 large can of chicken meat for the chicken *******.

    Do you have a crock pot? They are wonderful! And there are many things to make in them, not just pot roast. Go to the website on the bottom……lots of great ideas there.

    In the US we have little kids meals that have round crackers, meat slices, and cheese. My mom has just now discovered them. It has become her new favorite.

    Maybe some meat slices, cheese, and crackers, small pickles???

    Hmm well either a light pasta salad, or a homemade chuncky chicken and vegatable soup with hot french crusty bread :-)

    How about ready-made quiche from supermarket OR omlette OR spring rolls with ham slices or oven baked chicken with light salad along with a piece of fruit.
